    Brief excerpt from interview: I was specifically writing for a university setting, which I feel like is good for them to look at and be like 'oh this can improve the University of Hawaiʻi,' but it's not something that is bound to a university setting... so getting more awareness of horticulture therapy in general... it can be applied anywhere. Having more resources in America will be good anyways, so the idea of writing this is so that I will get that opportunity, so that I will be able to get this material out there.

    Brief excerpt from interview: I feel like it is difficult to switch over from scientific writing to more humanitarian type writing... I think just the language is a lot different. For scientific writing, you're writing spot on so that people don't get confused. So that they can repeat whatever you're doing exactly the way you're doing it. For humanitarian writing you use more vibrant language, you use more metaphors.

    Brief excerpt from interview: I'm a military kid... it's very difficult for me to stay in a place for too long. So I'm not too concerned about leaving Hawaiʻi. I don't think it's a thing we're gonna lose... I feel like we're at least going to be connected. I would certainly like to see something like [care farming] happen in Hawaiʻi.

    Brief excerpt from interview: I think it's generally difficult for universities to accept change as far as improving the campus grounds with gardens and things and I feel like if it was any other location you would have the difficult with weather, which is all the more reason that this shouldn't be a challenge in Hawaiʻi. You pay so much, you should get your money's worth, I assume. I felt like this was my home and it just really hurt that we couldn't make it better.

    Brief excerpt from interview: I feel like John really introduced me into a lot of people who were possibly in a place of higher power than me. For me, though, I get the unique opportunity because... it's not like I'm working here... so in that way, I feel like I have a little bit more freedom because I can do things that other people can't.

    Brief excerpt from interview: I'm specifically looking into the use of edibles for the treatment of mental illnesses. I think it's difficult to get anything done unless you get some support behind you, so having this opportunity to write a proposal and get some backing from the undergraduate research program has definitely helped me learn how to write better and get some support for things I'm interested in.

    Brief excerpt from interview: I feel like the University of Hawaiʻi has difficulties with Hawaiian ownership as far as this is an education for the Hawaiian people. And it feels like that every time someone offers to make a [sustainable] improvement... just because that's in their strategic plan... it's very specific, that strategic plan, but yeah they definitely have difficulty with achieving this.

    Brief excerpt from interview: Right now I'm working off of my proposal doing research and I'm actually going to France for a couple of weeks... doing some work on some farms and just seeing how they interact with the people that they work with. Ideally I think this is something that I want to do in my future, so in that respect, I think that this writing and this class being involved in community and being involved in working for change has definitely helped me figure out what I want to do with my future and will definitely be with me.

    Brief excerpt from interview: I'm also going for my RD to be a registered dietician. For that you have to do an internship. Right now there are no internships in Hawaiʻi... I think I'll probably end up going to the mainland for a little while to finish that up, take the exam, and get registered.

    Brief excerpt from interview: I'm sure [writing will figure into my future] because ideally I want something like care farming to be implemented in the medical system like it is in Europe... they do sort of like prescription farming where doctors can prescribe patients to go stay on a farm to go work on a farm to treat depression, bipolar, schizophrenia... many mental illnesses.

    Brief excerpt from interview: Because obviously I wrote the proposal for this class, I feel like it was just really beneficial for me to learn. I think it's something that I'll end up doing in the future as far as research is concerned, and grant writing is something people in the medical field tend to do a lot.

    Brief excerpt from interview: I define success a little bit differently than some people, so... regardless of the fact that we didn't have a lot of people every week, or we didn't have a lot of people who were committed to coming every week, I think something like horticulture therapy can be beneficial regardless of how many times you participate in it.

    Brief excerpt from interview: As a student, I think that success is defined by how much you learn and not really what you see. I think a lot of times, especially at this school, we're in lecture classes... where you take the exam and that's your grade and that's it. But classes like this where it's like a practicum class you can see what you've done and it's not so much, I dunno, academic, but it's just tangible. I think John measures success by what is being done. He's a really big activist for the sustainability of UH in general... He encourages students to take on projects around campus and really look at what we can improve.

    Brief excerpt from interview: I was really excited when I showed [Professor Cusick] my first draft... I feel like he got to know me a lot better through my writing. Ideally when you're writing a proposal, you're writing it so you can get the money. It's like writing a grant, so it's kind of like 'oh who are you writing for and what do they want to hear and how can you tell them what they want to hear without sacrificing what you want to say?'

    Brief excerpt from interview: I'm the manager of the free garden. The one behind the art building. [Professor Cusick] seemed like a really great guy and really interested in some of the same things I'm interested in, so I thought he'd be a good mentor with this class... The Honors 496 course description is really vague... for a purpose. It's so the students can really go their own way with it. It's really just designed to do research and learn the research process. How to write proposals, how to write a thesis, stuff like that.
