Description

A man born in Kohala but raised in Okinawa talks about adjustments he made on his return to the Big Island. After his dishwasher apprenticeship at American Cafe, he is hired by Kewalo Inn, where he rises from dishwasher to cook. Following a stint at Kapiolani Grill, he and his brother bought Lindy's Cafe and remodeled it to serve a World War II clientele. Later his and his wife Asae opened Silver Surf Fountain. Both recall its menu, work shifts, customers, employees, and eventual sale.
